For as far back as I can remember, my mother made delicious home-cooked meals for dinner every night. The ingredients were always fresh and nutritious and there always seemed to be leftovers. During holidays, the meals were always even more impressive. My grandmother, aunts, sister, and of course my mom paid such care and attention to the details that went into every course.
Now that I have the responsibility of cooking for my family, I realize what a feat my mother accomplished by whipping up (or what seemed to be whipping up) these yummy meals each night. It’s hard! Between wanting desperately to make something that my kids will enjoy that will also satisfy the adult palates is no easy task.
I love a big meal, and I have a sweet tooth and a salty tooth. I can eat and eat and eat and EAT, but I am not a fan of the post-meal coma. Really, there are few things more enjoyable than a good meal that leaves me satisfied yet energized. Additionally, whatever I’m making has to be quick and easy. I am firm believer that meals and snacks should enhance our activities, and that preparation and consumption shouldn’t slow us down.
