This past weekend we invited my parents to our home for dinner, seeing as though they cook for us, oh, about 30 times to our one! I had been craving something with peanut sauce but wasn’t brave enough to make up my own recipe. I never know how much vinegar to add, and too much sesame oil can throw things off as well.
I googled “Peanut Noodles” and chose to make this dish from Epicurious. It was straightforward and did not take too long, I’d say about 35 minutes total.
- I used one orange pepper and one whole English cucumber (sliced thinly) instead of the red bell pepper and yellow bell pepper.
- I left out the red pepper flakes because I knew my toddler would dig this dish so I didn’t want it to be too spicy.
- I grilled up some chicken thighs to add a little more protein because I can’t seem to get enough lately (#stillbreastfeeding).
- I used my Ninja instead of a blender but I don’t really think it matters. I will say though, that the Ninja made the sauce perfectly smooth, and it’s also very easy to clean.
Ok, so the best part about this dish is that is totally satisfies a carb craving (hello, it’s spaghetti after all) but I found that I didn’t need to go overboard to really get filled up. The peanut butter and chicken made it extra filling without being too heavy and carb-y. The peanut butter also added that sweet and salty flavor that knocks the socks off your tastebuds.
All in all, I highly recommend making this dish if you have people to cook for. The peanut sauce is simple yet flavorful, an it’s something a little extra special. Even if there is no special occasion, this is a good dish to have in the fridge for a few meals; I can personally vouch that the leftovers gave me plenty of energy to keep up with my kids and stay full.
